I can’t say I’ve got a sweet tooth, I prefer salty snacks, but a delicious creamy dessert is something I wouldn’t say no to, especially if it’s a healthy one.
The recipe I want to share with you I got from a cousin, who tried this fruit packed dessert on a holiday.
It not only looks great, because the three main fruits that are used have different colors, but it is also a very light, easy snack.
The Ingredients are the following:
- 4 cups of buttermilk or low fat sweet yogurt
- 1 cup of granulated sugar – however if you use sweet yogurt, you can use less
- 1 teaspoon of almond extract or vanilla extract if you prefer a smoother flavor
- 1/8 teaspoon of salt
- 1 cup fresh peaches
- 1 cup fresh raspberry
- 1 cup fresh blueberry
First wash the fruits, peel the peaches and dice them up. Put the buttermilk or yogurt in a big bowl and mix the sugar, salt and the extract, until the sugar melts and you get a creamy mixture.
Add the fruits gently to the mix and stir with care so the raspberries and blueberries don’t break. The next step is pouring it into a clean square baking dish that can handle freezing, or if you rather had individual servings, take 12 muffin cups instead.
All its left is putting them into the freezer, and wait until they’re ready.
Raspberries are not only delicious, but also the perfect weight watchers, because they are low in calories, but a rich source of antioxidants such as vitamin C, quercetin; have a good amount of manganese and fiber, which slows the digestive process making you feel full longer.
Raspberry has an oxygen radical absorbance capacity value of about 4900 per 100 grams, crediting it among the top-ranked ORAC fruits.
